Sally Fallon of the Weston A. Price Foundation Reveals The Benefits Of Butter, Eggs, Raw Milk, And More…

 

Sally Fallon founded the Weston A. Price Foundation in 1999 as a nonprofit, tax-exempt charity to disseminate the research of nutrition pioneer, Dr. Weston Price, whose studies of isolated non-industrialized peoples established the parameters of human health and determined the optimum characteristics of human diets. Dr. Price’s research demonstrated that humans achieve perfect physical form and perfect health generation after generation only when they consume nutrient-dense, whole foods and the vital fat-soluble activators found exclusively in animal fats.

 

The Weston A. Price Foundation is dedicated to restoring nutrient-dense foods to the human diet through education, research and activism. It supports a number of movements that contribute to this objective including accurate nutrition instruction, organic and biodynamic farming, pasture-feeding of livestock, community-supported farms, honest and informative labeling, prepared parenting and nurturing therapies. Specific goals include establishment of universal access to clean, certified raw milk and a ban on the use of soy formula for infants.

 

The board and membership of the Weston A. Price Foundation stand united in the belief that modern technology should be harnessed as a servant to the wise and nurturing traditions of our ancestors rather than used as a force destructive to the environment and human health; and that science and knowledge can validate those traditions.

 

While at the Northern Plains Sustainable Agriculture Society annual conference held in Aberdeen, South Dakota in February 2005, Investigative Reporter, Pam Killeen had the honor of interviewing Sally Fallon about the work she is doing with the Weston A. Price Foundation.

 

I’ll begin by saying that you are, indeed, one of my heroes, Sally. You’re a very brave woman, blazing a trail in the field of nutrition. When and how did you first get started studying a dietary lifestyle that challenges all of the “diet dictocrats”?

 

I guess it all got started about 30 years ago when I read Dr. Weston A. Price’s book, “Nutrition and Physical Degeneration.” I raised my children according to these principles and they were very healthy. Eventually, I realized that it would be a good idea to write a cookbook that would support his work. That’s why I began to write, “Nourishing Traditions.” I was also involved with the Price-Pottenger Nutrition Foundation in California for many years, but realized we needed an activist organization that was more energetic in getting out Dr. Price’s message to the public. In 1999, Dr. Mary Enig and I joined forces to begin the Weston A. Price Foundation.

 

Prior to starting the foundation, you had already written your cookbook, “Nourishing Traditions”, had you not?

 

Yes, I had written the first edition in 1996 and then a second edition came out in 1999, the year we established the Weston A. Price Foundation.

 

As the title of your cookbook indicates, you truly do challenge the “diet dictocrats.” In many areas, you completely contradict what mainstream media and science is telling us about what we should be eating. What would you say is the most blatant nutritional lie we are being told today?

 

Dr. Enig and I both believe that the most glaring lie we’re being told today is surrounding the demonization of saturated fats from animal foods and tropical oils (such as coconut and palm oil). If you believe that saturated fats are bad for you, you’re going to make the wrong nutritional choices. Given this very misguided advice (to avoid saturated fats), you may decide to avoid red meat, whole milk, butter, cheese, coconut oil and so forth, all of which are very nutritious foods.

 

Another glaring lie in line with the saturated fats issue is that cholesterol is bad for us.

 

When I was working on the second edition of “Nourishing Traditions”, I came across the work of Dr. Raviskov who has an interesting website, www.ravnskov.nu. When I contacted him, I asked him why he hadn’t yet published his work. He told me that he couldn’t find a publisher. I could relate to what he was telling me! I was thrilled to be able to publish his work with my publishing company, New Trends. His book, “The Cholesterol Myths”, became the second book that I published. His work reveals the misconceptions around cholesterol. Again, like saturated fat, if you believe that cholesterol is the “enemy,” you will be led down the wrong path and make the wrong choices about your diet. Furthermore, this myth has totally skewed the practice of medicine. If you buy into the myth that cholesterol is a bad thing and subsequently cause your cholesterol to lower, you could make yourself very sick.

 

That’s right. I can totally relate to what you’re saying. I made the mistake of becoming a vegan for about 10 years. I truly believed I was doing the right thing and would help regain my health by eating this way. Because I was avoiding animal products (saturated fat and cholesterol), I’m sure my cholesterol levels must have been far too low to be healthy. After 10 years of being a vegan, I slowly started getting back into animal foods and was able to recover. I really thought that I was getting all of the protein and B12 I needed from a plant-based diet. And, I did a lot of research, thinking I was following the diet properly. I felt for myself the side effects of the misinformation surrounding the vegan diet.

 

When Dr. Price traveled around the world, he didn’t find any cultures following a vegan diet. He did, however, discover different several groups whose diet was based on plant foods. But the animal foods that they ate in small amounts were very nutrient dense—foods like insects and whole dried fish and shrimp.

 

Individuals can experience many different side effects by getting their cholesterol too low. For example, you can lose your ability to make hormones as many hormones are made out of cholesterol. All of the hormones that your body uses to deal with stress, the corticoid hormones that deal with mineral metabolism and glucose regulation, are made out of cholesterol and all of the sex hormones are made out of cholesterol. If you were to ask a man if he wanted to get rid of the substance he needs to make testosterone, what do you think he would say? If men found out that lowering cholesterol will reduce or eliminate their libido, I believe men would ignore their doctor’s advice.

 

Do doctors add insult to injury by prescribing drugs like Lipitor?

 

Lipitor is the strongest of all of the statin drugs. They all have the potential of having some serious side effects because they not only cut off the production of cholesterol, they cut off the production of many important nutrients such as CoQ10 (which is an important nutrient for your heart). Other side effects of cholesterol-lowering drugs include: depression, infertility, muscle problems, weakness and neuropathy.

 

What can individuals do to achieve healthy cholesterol levels or must they simply abolish the notion that cholesterol is their enemy?

 

High cholesterol levels are not related to heart disease, as we have been led to believe. First of all, individuals must cure themselves of “cholesterol anxiety.” In other words, they have to detach themselves from the fear that surrounds cholesterol. Get on real foods and stop worrying about your cholesterol. If your cholesterol doesn’t go down, it’s probably because your body needs that cholesterol.

 

University-trained nutritionists have been declaring for several decades now that we need to lower our saturated fat intake and lower our cholesterol. Despite this advice, we have an obesity epidemic and heart disease is on the rise. I see a similar failure with the “diabetic diet;” even with this diet, we still have a diabetes epidemic. Even though we have insulin, we still have diabetes. Clearly, mainstream solutions have not had the answers we need to create a healthy society. In your new book that you co-authored with Dr. Mary Enig, “Eat Fat, Lose Fat”, you contradict the advice of all formally trained nutritionists by recommending a high fat, high cholesterol diet in order to lose weight.

 

Clearly high carbohydrate diets are not working. And high protein diets are dangerous because they deplete important nutrients, especially vitamin A. The third alternative becomes evident – we need to look towards a high fat diet. Fats are very satisfying and supply the body with some very important vitamins. In the book, we focus on coconut oil as it has some amazing properties for weight loss. The types of fatty acids in coconut oil are not stored as fat in the body. Rather, they are burned for energy. Coconut oil is great for boosting metabolism and providing a feeling of satiation. As such, coconut oil will not cause you to gain weight.

 

I understand that coconut oil boosts the metabolism by causing “thermogenesis”?

 

This is demonstrated in the science. Coconut oil raises body temperature. This is really good news for people who are overweight due to low thyroid conditions. Coconut oil boosts the metabolism, raises the body temperature and gives you more energy. We have even had reports of people who have been able to get off their thyroid medications simply by consuming coconut oil.

 

Your message has been reaching several countries around the world. What kind of feedback are you getting from people who are following your dietary advice?

 

We get wonderful feedback. For example, I was just speaking with a man who had been suffering from sugar cravings. I had told him that he needed to increase his intake of saturated fats. Sure enough, once he began to eat more butter, eggs and so on, his sugar cravings disappeared. He did not have to use his willpower; he just no longer wanted to eat sugar.

 

I met him. I noticed he was slender and looked very healthy.

 

The only people who have trouble with our lifestyle are people who have been on low fat diets for a long time, and have very low cholesterol, and hence trouble dealing with the fat. The fats may make them nauseated. Such people may have to slowly increase their fat intake. Coconut oil is fairly easy to digest. You can start with a teaspoon of coconut oil before each meal and gradually increase to the amount we recommend, which is about a tablespoon. 

       

According to Dr. Price’s research, butter is a very nourishing, sacred food. You and Dr. Enig also recommend that we eat large amounts of butter.

 

Once again, some individuals may have to start off slowly with the butter. But, yes, butter is loaded with many important nutrients that our bodies need. However, it is important for the butter to be organic and come from grass-fed cows.

 

Even though the book has only just been released, have you had any weight loss testimonials?

 

One man has already written telling us that he has lost 120 pounds. Many others have written telling us that this is the first “diet” that has ever worked for them. This diet will not make you skinny, however. What it does is that it normalizes weight. We do warn people that being too slim is not healthy. The standards that are being published today are too stringent for most people.

 

What other benefits are people experiencing?

 

We have wonderful reports of people increasing their energy, regulating their hormonal problems (especially menstrual problems), restoring fertility, reversing arthritis. Dr. Cowan, who is on our Board, has been successfully using this diet with his cancer patients.

 

That’s very encouraging news, Sally. And, I must share with everyone that I, too, have met several people who have been following your advice and have successfully restored their health. I also noticed that they did not simply regain their health only to lose it again after so many weeks, months or years; they successfully regained their health and are able to maintain their health even years later. This means a lot to me because, for over 10 years, as I was relentlessly searching for answers to regain my health, I would try (while I was a vegan), for example, a raw food diet and feel better for a short period of time, then eventually relapse or get worse. When I look back at the groups of people I met who were hoping that veganism, macrobiotics, raw foodism would help them, then compare these people to the ones I have met who follow your advice, the results are night and day. There are far too many “gimmicks” out there. This only leads to confusion and, ultimately, more sickness. What I respect about your suggestions is that they are very basic. One can successfully get healthy while they live in the “real world” following your advice. Can you give us an example of food choices in a typical day on this diet?

 

On the “Eat Fat, Lose Fat” diet, you start off your morning by taking 1 to 2 tablespoons of coconut oil (melted in some hot water or herb tea) and some cod liver oil for the vitamin A. For breakfast, you could have eggs, or a smoothie made with whole yoghurt with some coconut milk and some egg yolks. You could also have a bowl of oatmeal, which has been soaked overnight, then cooked in the morning upon rising. The portions of each meal are small, but since you are taking coconut oil before each meal, you will find that you won’t overeat. Lunch could consist of a piece of meat with some vegetables and butter. It could be a tuna salad. It could be some cheese with some whole grain bread and butter. Simple, but very filling. Dinner could be soup or salad, meat and vegetables (again, with plenty of butter!). We recommend organ meats like liver at least once a week (which could be in the form of a delicious pate) and use lots of coconut products (especially whole coconut milk) in soups, curries and stews. Although this diet is not as restrictive as the Atkins diet, we still don’t recommend a lot of carbohydrates.

 

We are bombarded with so many “faddish” diets that are very restrictive and bland. This diet not only sounds very simple, it sounds very delicious! It also consists of the foods we, as North Americans, are most familiar with. I don’t know anyone who doesn’t like butter. I think many people will be very drawn to this diet simply because of the butter!

 

It may be a diet full of familiar “whole” foods, but it is not a diet full of familiar “processed” foods. For this reason, the diet may be a little difficult for those who have been on a processed food diet for most of their lives. The industrialized, processed food industry is one of the main contributing factors to disease. Processed foods are difficult for our body to assimilate, are potentially loaded with MSG (and/or other neurotoxins) and are deficient in many important nutrients. On the other hand, nutrient-dense, whole foods give us what we need to be healthy. If you want to gain weight (or develop other health problems), eat foods containing MSG. Hydrolyzed protein is also MSG. In the laboratory, scientists feed MSG to test animals in order to get them to become obese—MSG has that effect and it is in virtually ALL processed food.

 

I’m also very impressed by the suggestions that we start to buy our food directly from the farmers. That way, we can seek out farmers who put the animals out on pasture. We can also seek out farmers who avoid the use of chemicals and medications and maximize nutrient density in the foods that they produce.

What you’re referring to would be foods such as: grass-fed beef, chicken, eggs, raw milk, cheese, yoghurt, quark, kefir, sauerkraut and more. Thanks to your efforts, Sally, farmers can directly profit from the sale of their products and consumers can have more control over their health by choosing high quality food.

 

Consumers need to familiarize themselves with terms such as “grass-fed” or “pastured” animals. For example, in the case of chickens, “free-run” or “free-range” can still mean that they are in confinement, but not in cages. Meat, chicken, eggs etc… from pastured animals have more nutrition. When animals are in confinement and fed too much grain (such as corn and soy) there is a far greater chance that the meat will be contaminated with E. coli. Plus, when the cow is on pasture, the meat and the milk will contain more nutrition. 

 

In the chicken industry, I’ve been told that the term “free-range” is terribly misleading. The chicken confinement operations build balconies on to their buildings because the definition to “free-run” means that the chickens have to have access to the outdoors. In other words, they really never go outside. They’re actually called “balcony chickens.” Can you tell us more about the nutritional differences between confinement animals and animals that are raised on pasture where they belong?

 

We designed our diet plan using the fundamental nutrients Dr. Price discovered in his research. Dr. Price traveled around the world searching for the healthiest people so that he could determine the healthiest diet. One of his most critical findings was that the healthiest people consumed high amounts of the fat-soluble vitamins, A and D. These vitamins can only be found in animal products such as organ meats, cod liver oil, butterfat and egg yolks. However, the vitamin A will only be there if the animal is eating green grass. Likewise, the vitamin D will only be there if the animal is outside exposed to sunlight. This is why it is so important to get our animals out of the factories and onto pastures where they belong.

 

How much credence do you give “scientific studies”? For instance, a new study was just released indicating that there’s a connection between eating red meat and colon cancer. What you’re telling us is to eat all sorts of foods that “experts” are telling us to avoid.

 

In Argentina, where they eat high amounts of red meat, there is very little incidence of colon cancer. When you honestly look at these studies, you do not find an association of colon cancer with the consumption of fresh meat.  But you do find an association with processed meats, loaded with additives.

 

I understand that you believe that we will see an end to confinement operations in another 50 years.

 

The confinement system is going to collapse under its own weight much sooner than that, starting with the dairy system. This is an unsustainable system. Cows in confinement give birth to 1.7 calves, on average. Half of those calves are male. Some of the cows don’t survive and some of them aren’t good milkers. So all it takes is second grade math to figure out that this is not going to sustain itself. We’re just not going to have enough dairy cows to continue this system.

 

Isn’t pasteurization just a form of duct tape to cover up for how unhealthy the milk is from these sick confinement cows?

 

That’s right. Pasteurization is trying to make unhealthy milk healthy. The problem with pasteurization is that it destroys the “immune system” of the milk. In other words, the pasteurization process destroys all of the safety systems in raw milk that eliminate pathogens. Pasteurization also deforms the protein in milk so that when you consume the milk, you’re body thinks it’s a foreign protein. That’s why more and more people can’t consume commercial milk – the body reacts to it as an allergen.

 

People react to the milk, then turn towards alternatives such as soymilk. You have recently published Dr. Kaayla Daniel’s book, “The Whole Soy Story”, which goes into detail about the problems with soy. Can you elaborate on your opposition to the soy industry?

 

When I was researching “Nourishing Traditions”, I came across a lot of research about soy. Studies showed that you cannot get the toxins out of soy through the regular methods and that in order to digest soy it must be prepared through proper fermentation techniques. With all of the inherent problems with soy, I wondered why there had been such a push to build the soy industry, so I asked Dr. Enig. She told me that the soy oil industry needed to get rid of the soy waste products so they built another industry around the soy protein industry (in order to make more money). The soy protein industry targeted the upscale, health conscious shopper and started pushing soy burgers, soymilk, etc…The propaganda campaign for soy has been relentless and has caused a lot of people to become ill from their products. The most common complaint we hear is that soy is depressing thyroid function. Our biggest concern, however, is that soy is being given to babies in the form of baby formulas. Soy is full of estrogenic compounds which we now know are endocrine disrupting that can adversely affect the sexual development of the child, as well as behavior, thinking and learning.

 

I think most men would avoid soy if they found out that it adversely affects their libido. 

    

That’s exactly right. There are studies that show that men who do eat soy have lower testosterone and higher estrogen levels. I felt very strongly about warning people about the problems associated with soy. Dr. Daniel has done an absolutely outstanding job with her new book. She has taken very complex material and made it easy to read. I believe this book is going to have a huge impact on the food industry and the way we eat. I think it’s going to bring people to their senses. She has 20 endorsements from top scientists. 

 

When I was a vegan, I really thought soy was good for me. I truly believed all of the propaganda including the idea that soy is a complete protein (which I later discovered, it is not). I’m sure I could give you and Dr. Daniel a testimonial about how I was adversely affected by soy (for example, I was cold all of the time and had wasting muscles even though I was an athlete). It can take a while to re-educate people, but if they don’t have the correct information, they will do what I did and believe the mainstream media and science (which can be completely bogus!). When I first heard you speak, Sally, I immediately “got” what you were saying. I was able to “let go” of all of the programming I had received when I researched the vegan, raw food, macrobiotic diets. I got rid of my “phobias” surrounding animal protein and fat. The albatross was removed from my shoulders, I discarded all of the vegan propaganda I had studied for 10 years and started eating the high quality, pastured animal protein and fat. What a relief! My body thanks me for that! I regularly meet other people who fell into the same trap I did and have switched to what you call “traditional” foods, and are also enjoying health benefits. The individuals I meet also complain of experiencing side effects from soy.

 

Yes. In “The Whole Soy Story” book by Dr. Daniel there are “My Soy Story” testimonials sprinkled throughout. These are heartbreaking personal testimonials including one from a woman who experienced thyroid problems from simply eating soy lecithin. There are testimonials from distraught women whose children are growing up unable to have a normal sex life because the women consumed soy when they were pregnant or they gave soy to their babies in the form of baby formula. I just received an email this morning from a woman whose husband is a doctor (a thyroid specialist). She said that they had been on soy for years. He developed thyroid problems and had to go on medication. Then his wife developed thyroid problems and that’s when they started doing some research on the internet and found out that it was the soy that was causing their problems. You can’t imagine how shocked these people were! He’s a thyroid specialist and did not know that soy depresses the thyroid.

 

You even mention that some individuals have thyroid problems when they consume an excessive amount of cruciferous vegetables (such as broccoli, cabbage, cauliflower, brussel sprouts) that are not prepared properly.

 

That’s right. Cruciferous vegetables need to be cooked or fermented so that the thyroid-suppressing components are neutralized. I’m very concerned about people who juice these vegetables because the juice will be concentrated with the thyroid depressing substances.    

 

I also studied under Dr. Ann Wigmore (Hippocrates Diet) and became a “raw foodist” for many years. I was very involved in juicing and eating raw vegetables. I had to learn the hard way that this diet is not only a lot of work it can also be very unhealthy. It is also very difficult to follow this diet and stay in the real world at the same time. The allure of the raw food diet is that when you start eating uncooked foods, you will feel some initial benefits, but in the long run, since it is a diet that is deficient in many nutrients, you may experience some detrimental health effects (but the symptoms may take a long time to manifest themselves). Again, I have met several people who have had adverse health effects who are doing the Hippocrates/Ann Wigmore style of diet consisting of raw foods and/or juicing. The good news is that many of these people have caught on to the problems inherent to these types of programs and are much healthier on traditional foods (such as raw butter, raw whole milk, kefir, yoghurt, chicken, eggs from pastured animals etc…).

 

Even if someone can’t buy food from the farm, they can still successfully live in the real world by buying these whole foods by shopping in the outer periphery of the grocery store. This is a better choice than buying processed foods that are located on the middle shelves. These processed foods are potentially laden with neurotoxins and trans fats! At the grocery store, if you are buying dairy products, make sure to choose the high fat dairy products and avoid the low fat, skimmed, 1% etc… At the health food store, you will be able to find pasteurized organic dairy products. There are even some small dairies that are producing commercial non-homogenized, pasteurized dairy products. Do the best you can to find the product that has been subjected to the least amount of processing, and make sure to choose the high fat content. 

 

In your presentation, you outlined 4 things that you did that helped dramatically increase your energy. Of course, fatigue has become an epidemic today. What are these 4 things you did to help increase your energy?

 

One thing I have always done is to eat butter, and other high fat foods (traditional fats, that is). A second thing that really helped me was to eat the lacto-fermented foods like sauerkraut, which help your digestion. Anything that helps your digestion will help to increase your energy. A third thing I did was to learn how to properly prepare my grains so that they were easier to digest. Finally, I started regularly preparing and consuming traditional bone broths. Instructions on how to prepare these foods are in my books, “Nourishing Traditions” and “Eat Fat, Lose Fat.”

 

Can you elaborate on the proper preparation of grains? Many people eat cereal for breakfast. What should they know about a good breakfast?

 

Instead of eating what I call the “cruel” breakfast (which normally includes processed orange juice, pasteurized milk and extruded cereal), I recommend you switch to a very filling “gruel” breakfast, old-fashioned porridge. The oats need to be soaked overnight in a solution of water and a tablespoon something acidic (such as lemon juice or whey), and then cooked up the next morning. Be sure to add lots of butter and cream to your oatmeal. You can also add coconut and a natural sweetener. Oatmeal is a far better choice than the extruded, commercial cereals you find in the grocery stores. The proteins in grain are very sensitive to extreme heat. When the grain is processed and rendered into a flake, for instance, the heat from the extrusion process makes the protein in the grain toxic. You’d probably be better off eating the box than you would be eating the cereal! If you like pancakes, you can freshly grind your flour, and then, like the oatmeal, soak the flour overnight. I have the complete pancake recipe in my cookbook. People love them. They are very light and fluffy. Of course, eggs are also a very healthy choice for breakfast.

 

Should people buy sourdough bread? 

 

People need to buy “genuine” sourdough bread or make it themselves. Genuine sourdough bread requires a fermentation process that helps get rid of the anti-nutrients in grain, making the grain easier to digest.

 

You have some great recipe ideas in your books. Now, I’d like to ask you about your other website, www.realmilk.com. Can you tell us some of the critical issues surrounding the raw milk controversy?

 

I think the main hurdle to overcome is to get people over their fears about raw milk. There are a lot of errors in what the government is saying about the dangers of raw milk. Lee Dexter, White Egret Farm in Austin, Texas did calculations using data on the CDC website and determined that (based upon numbers of outbreaks, or cases of food borne illness per person) raw milk is the safest food in our food supply. Raw milk is 2 ½ times safer than pasteurized milk and 3 ½ times safer than other foods. If the government were really serious about protecting us, they would tell us not to eat fruits and vegetables because the most outbreaks of food borne illness come from eating fruits and vegetables. And yet, nobody is seriously proposing that we avoid raw fruits and vegetables. We have the choice as to whether or not we cook them. The pasteurized milk industry uses the 40-year-old science in order to make a case for pasteurized milk. They have a clear, biased, unsubstantiated and unscientific vendetta against raw milk. As I mentioned earlier, the dairy industry is in a lot of trouble these days.

 

What can people do to get the raw milk in their area?

 

It depends on where you live. In California, Pennsylvania, and Connecticut you can get raw milk in the health food stores. In some states, you can get it from the farm. In other states, you have to get it by joining a cow share program. If you go to www.realmilk.com and click on “Where”, you can find, by state, where to find raw milk in your area. Alternatively, you can go to www.westonaprice.org and contact your local chapter to find sources of healthy foods, such as raw milk from pastured cows.

 

Some readers will have some concern over the safety of raw milk. Do the dairy farmers who are providing raw milk test their milk at labs to make sure that certain standards are met?

 

That’s a common practice, but even more important is for the cows to be tested free of disease, that they graze on pasture and that they be milked in clean conditions. Customers should visit the farms they are getting their milk from. Raw milk has an admirable history of safety. Raw milk has been legally sold in California for many years and there haven’t been any problems. You also published Ron Schmid’s book, “The Untold Story of Milk”, where he gives a detailed explanation of how pasteurized milk took over the dairy industry. Can you give us a summary of this story?

 

He tells a wonderful story. Back in the late 1800’s, when people were crowded into cities, we had what was called a “milk problem.” The milk was being produced in confinement dairies in the cities. They were called “swill dairies” and the cows were fed the “swill” from the breweries. This resulted in milk that was so dirty, so unhealthy that the death rate of the children in the cities was about 50%. This was called the “milk problem.” Two solutions were proposed. One was the certified milk movement where the milk was produced on farms and tested for cleanliness. This milk was brought in from the country on trains or lorries. The other solution was pasteurization. Interestingly enough, both pasteurization and the outlawing of the swill milk occurred at the same time. The “milk problem” went away. Pasteurization took the credit. But for many years, certified raw dairy and pasteurized dairy were both available and the health officials were very grateful to have the certified raw dairy and they recommended it. However, eventually, the certified raw dairy lost out to the commercial interests of pasteurized dairy.

 

Some research implicates pasteurized dairy as being a potential cause of diabetes.

 

Pasteurized dairy, sugar and trans fats are all potential contributing factors to diabetes. If your child has earaches and you take him to the doctor, the doctor will tell you to stop giving him milk. The doctor is acknowledging that there is a problem with commercial milk. When a child goes on healthy dairy (raw, from pastured cows), his health problems will soon disappear. The sense of relief for the parents is profound. They have finally found a food that their children can and will eat! It is also a food that provides their child with the nutrients he needs. There are more and more grateful mothers who are joining the campaign for real milk. Politicians can’t ignore the many women who testify to the fact that raw milk saved their child’s life.

 

Some experts are warning us that the newest generation of children will not live as long as their parents. This is the first time in the history of mankind that a phenomenon such as this will potentially occur if something dramatic isn’t done to prevent it! We still have a very high infant mortality rate. The rate of infertility is 1 in 4. Birth defects are on the rise. Many of these problems are due to dietary deficiencies. Parents are clearly very concerned and are starting to take action by removing the processed foods that are contributing to these problems and replacing them with the traditional, nutrient-dense foods you teach us about. Women who adopt the traditional diet before, during and after their pregnancies have very healthy babies. I notice that they also seem to be very intelligent and alert children. That is a real tribute to you, Dr. Price and Dr. Enig.

 

On our website you will find our “Healthy Baby Gallery.” These are beautiful, healthy, calm babies who don’t tend to cry. In his travels, Dr. Price discovered that the babies brought up in traditional settings rarely cried. Simply put, they were happy, healthy babies.

 

Are people being mislead by the current belief that we are supposedly living longer? Many people fall back on this belief in order to justify their poor diets.

 

People say, “Well if our diet is so bad, why are we living so long today?” The people who are living long today are the people who grew up on real food in the early 1900’s. At that time, we had one of the healthiest diets on the planet. We had pasture-based agriculture, people ate lots of butter. People who were raised on this type of a traditional diet will live longer no matter how badly they abuse their bodies later on. The people who were born after WWII are not going to live as long as the people who were born before WWII. We are seeing many cases of children who are dying before their parents. And we have a crisis with our babies today - low birth weight, birth defects, learning disabilities. It’s rare to find a healthy baby today. What’s going on is what I call, “The Natural Selection of the Wise.” The people who do not get wise and start realizing that they have to choose healthy foods are not going to reproduce. But as long as we keep educating people, getting the truth out, I’m confident that things will improve. There’s no way that we can’t be successful because Nature’s laws are implacable and will run their course. I just hope that a lot of people get wise very quickly.

 

You even use a very strong word to refer to this phenomenon – GENOCIDE.

In order to prevent this genocide, people have to say “no” to the multi-nationals by not buying their food and start buying healthy food from the farm.

 

There is a very easy way to solve the problem, just don’t buy the “witches food”. Don’t buy into food propaganda (such as the low fat diet, soy, pasteurized dairy, veganism, etc…). Go to a farmer to buy these wonderful traditional foods we’re talking about. This will help regain the health of your family and will help build an economy based upon sound principles.

 

Why do you think that we are being warned about hunting deer? Do you think that there’s an agenda to prevent us from eating healthy, wild sources of animal protein?

 

Yes. If the food is completely controlled through the multi-nationals, then only they can stand to benefit. Of course, the animal protein from confinement animals is not very healthy. Hunters need to remain hunters and not be deterred from any potential propaganda.

 

I read a story out of Germany recently that spoke about pastured eggs being contaminated with dioxin. Is this yet another scare tactic that the food industry could use to scare us into buying commercial eggs?

 

Consumers need to be cautioned about any media campaigns used to support industry. For centuries, media has been used irresponsibly. The media supported the lies surrounding cholesterol and saturated fat, for instance. For some individuals, when they hear something over and over again, it becomes easier to believe the lie than it is to believe the truth. It comes down to common sense. If you want to find the truth, you just follow the money. I would prefer to see most of the profit end up in the farmers’ pockets, rather than in the pockets of the multi-nationals. Whether they’re trying to scare us about dioxin in the eggs, wasting disease, avian flu, mad cow disease, etc, we still need to acknowledge that we have to buy our foods from reputable, conscientious farmers who are using proper farming practices. This is just common sense. If you visit a confinement operation, you will probably not want to eat the food from this source ever again.

 

I have met farmers who have become very ill from working in these operations. The air quality is very poor and they get sick from breathing the ammonia and other chemicals created from the animals.

 

Put them back out on pasture and we’ll all be healthier!

 

Your other project is to build a lab so that foods can be tested for nutrient density. Can you tell us a little more about how that is going?

 

One of our goals at the Weston A. Price Foundation is to eventually be able to test foods for nutrient density so that we can determine optimal farming methods and optimal preparation methods. Our government does nothing to support these matters. Our government doesn’t believe agricultural practices affect the nutrient uptake in the plant! Nor do they acknowledge that there are nutritional differences once the food has been processed. Instead, they think that all you have to do is add synthetic nutrients back into processed foods in order to make them healthy. We would very much like to get started on our laboratory and would be very grateful for any donations. I would also encourage your readers to get a membership with the Weston A. Price Foundation.

 

I think all of your supporters will be contributing to a very worthwhile cause. Your research will definitely affect the quality of life of current and future generations. Do you have any parting words?

 

I remember having a conversation with Dr. Enig about all of the scientists who have prostituted themselves to the food industry. I told her that I couldn’t understand how these scientists could look at themselves in the mirror and Dr. Enig said to me, “We’re the ones that are having fun!”

 

That’s because you’re revealing the truth!

 

And, we’re having a great time doing it.
